A Quick and Easy Plant-Based Recipe

Hello Friends! I’m currently writing this blog post from the beautiful, tropical island of Antigua. This is my second trip this year to Antigua. This trip is a bit longer than the one I took last month, so I’m taking more time to create my own meals and engage in my wellness routines when I’m not out enjoying family or the island. I absolutely love practicing my self care and wellness routines while on vacation because it feels EXTRA MAGICAL ✨✨ 

This parfait recipe idea truly came from my grandmother. She makes her’s at home and batches them for a few days at a time. What a great idea for meal prepping! She uses different fruit than me, but that’s the fun of it.

I wanted to share because I know it can be helpful to have easy-to-make plant-based recipes recorded somewhere for your convenience. Also, if you’re anything like me and love an easy delicious meal, then this is perfect! This yummy, plant-based recipe takes like 5 minutes to prepare.

Ingredients

1) Yogurt

There are many vegan yogurt options if you want to avoid dairy products. If not, then a nice plain or vanilla-flavored yogurt is perfect as you load it with delicious plant-based fruits and nuts.

2) Granola or Nuts/ Seeds

I used granola during my second trip to Antigua. It was easy to find different types of granola in the grocery store. You could also use seeds or nuts for your parfait. Here are some ideas: chia seeds, flax seeds, walnuts, cashews, and even bee pollen would be great for adding texture and taste.

3) Fruits of Choice

I used the following fruits in my parfait:

Lychee

Mandarin Oranges

Mango

Strawberries

Banana

Papaya

Yum!

Some of the fruits were fresh and quite a few were canned in light syrup. The healthiest option is fresh fruit, but always use what you can. If you opt for canned fruits then try to choose those that are low in sugar, low in sodium, and are most natural/organic.

Method

This method for making plant-based parfaits is super simple which is an added bonus to the recipe also being so fresh and delicious!

Step 1

Place yogurt or vegan yogurt into a bowl, glass, or another container that you can eat out of.

Step 2

Layer the fruit and granola. I love to do the fruit last so I can see all of the vibrant, beautiful colors. Figure out what order you prefer. You can also do multiple layers which is especially nice if you eat a lot or are using a glass container to make this meal. The glass container will look really official like you went to a restaurant and you’ll be able to see the pretty layers.

Step 3

Dig in and enjoy!
